He considers giving her a anonymous love poem. He could sneak it into her mailbox unsigned and watch her realise how much love he has for her. Then after she spends a while mooning over her secret admirer... he could admit that it's him and she'd fall head over heels for him.
Trouble is, last time a girl he liked heard his poetry, it didn't go so well. He's not much of a poet.
But! Buffy and Spike do share an interest in killing things. Yes, the more he thinks about it, that's definitely the way to her heart. Show Buffy that he's not just committed to loving her, he's committed to living her hero lifestyle.
He'd bring a vampire, but they don't leave anything he can show as proof, so they won't serve for his purposes. Finally, he finds a spiny-looking demon that feeds on human bones. Nasty fellow. Spike has a nice fight with it. He wins, and he drags the corpse back to Buffy's house.
